Zucchini Boats with Feta and Cherry Tomatoes

Zucchini Boats

Salad no 5 on the Salad run. Lot of Indians are not used to the flavour of zucchini and is not a part of the regular cuisine.  Things are changing now, people are now adopting a lot of new veggies and fruits in the diet for the variety and nutrients each brings on the table.

It is slightly challenging to make Zucchini likeable by family. So tried something that I did not try before.

Slightly complex recipe but still easy to do.

Zucchini Boats Recipe

By Serves: 2 Prep Time: 5 minutes Cooking Time: 15 minutes

Ingredients

  • 1 large Zucchini, cut vertically and them made into 1.5-inch pieces
  • 100 gms of Feta Cheese
  • 7-8 basil leaves
  • 8 cherry tomatoes
  • 2 tbsp EV Olive Oil
  • 1 tsp Freshly ground black pepper
  • Salt to taste

Instructions

Pick each 1.5-inch piece and scrape the inner of the Zucchini to make it hollow and shaped like a boat

Repeat the process with all the pieces. I believe you should roughly have about 8 in all

Apply some olive oil, salt and black pepper

Preheat the oven at 180 deg Celsius for 10 minutes

Now grill the Zucchini pieces in the oven for 15-20 mins at the same temperature or keep checking till it is browned a bit and soft enough

Once done, pull the pieces out and add feta in the hollow of the boats you created

Top it with chopped basil

Cut the cherry tomatoes in half

Heat a pan with olive oil and roast the halved tomatoes till they become a bit brownish in colour. Cook on a high heat. The tomatoes should not be over cooked.

Spread the roasted cherry tomatoes on the boats.

Notes

For me this works as a salad or a side dish for a lot of dishes again. Enjoy this creation.
