Health is wealth, they say. To live a happy life, we need to take care of our bodies. Breakfast is our biggest meal and am sure we all like it to be healthy.
I happened to see a photograph of ex-Indian Cricketers in the 1970’s coming out of an airport while going on a tour. There I saw most of the cricketers holding a cigarette in their hands. I am not sure those cricketers would even qualify to be in the team now. The fitness standards have changed with changing approach towards one’s body. The amount of people I see running on the road early morning has gone up 10 fold in 10 years. Finally Health & fitness have really caught up now in India in the general public.
One part of it is fitness and the other part is eating well to maintain the fitness. Keeping this in mind, I am starting with this series of Healthy Breakfasts as promised.
What better way to start than with my favourite breakfast of eggs. Eggs are healthy too.
Baked Masala Eggs - Healthy Breakfast

- 3 Eggs
- 1 small finely chopped Onion
- 1/2 finely chopped tomato
- 1/2 finely chopped capsicum
- 1 finely chopped green chilli
- Enough butter to mildly grease the baking tray
- 2-3 finely chopped garlic pods
- 1 cheese cube of processed cheese
- Salt and black pepper powder as per taste
Instructions
Apply the butter to a small baking tray
Add the Onions, tomatoes, capsicum, some part of the garlic
Sprinkle some salt and black pepper
roll those ingredients in the butter
Pre-heat the oven to 175 deg Celcius
Keep the baking tray in and cook for 10 mins
Remove the tray
Break the eggs into the tray, one by one
Top it up some salt, broken pieces of cheese, green chillies
Sprinkle some salt and red chilli powder or flakes (whatever is available)
Push the tray back into the oven for 5 mins.
The eggs should be done well in 5 mins, if not you can keep baking for 2 more mins
