Lemon, Chilli and Ginger pickle
A very simple but a must have pickle in the winters. The lemon plays the magic on ginger and chillies. The spicy and tangy nature of this pickle always keep you wanting more.
I love the pieces of ginger, but they do get a bit out of hand when mixed with green chillies. That is the fun of this combination.
Mom always made this pickle only with lemon and chillies. I changed the legacy by adding a few ginger pieces to it. This pickle too has a limited shelf life.
Here is my take on the famous lemon ginger chilly pickle.
Lemon, Chilli and Ginger pickle

- 6 green chillies
- 3 lemon
- 2 tbsp finely chopped ginger pieces
- Salt to taste
Instructions
Cut the lemons in half
Squeeze out all the juice of lemons into a jar
Add the finely chopped ginger to the juice
Slit and Cut green chillies add to the juice.
Throw the squeezed lemons in too
Add the salt
Keep the glass jar in the sun for 3-4 days
Notes
Have this pickle with a bowl of hot daal & rice on a winter afternoon.
